Hands placing brown eggs into a paper egg tray
  • Grade AA

Thick, firm white, high round yolk, air cell 3 mm deep or less. Best for frying and poaching.

  • Grade A

Reasonably firm white, air cell 5 mm or less. The grade most often sold in stores.

  • Grade B

Thinner white, flatter yolk, air cell over 5 mm; shell may be stained. For liquid, frozen and dried egg products.

Storing eggs and native egg size

Eggs keep up to 15 days at room temperature and up to 30 days at 10–13 °C. They lose 2–3% of their weight in storage and transport, and a tray may hold up to 3.4% eggs from the next smaller size (PNS/BAFS 321:2021).

Native hen eggs weigh about 40–44 g, so they fall in the peewee class (PCAARRD). Prices by size are in egg price per tray; live bird prices in native chicken prices. Buying for a store or eatery? See wholesale native chicken and eggs.
